Seafood Chowder

1 onion, chopped and sauteed in butter until soft
4 med. potatoes and 4 carrots, cubed and partially cooked in Micro
2 packages (8oz. Size) of cream cheese
Seasoning salt to taste
1 1/2 teaspoons Old Bay seasoning
1 lb Shrimp
1 lb Crab meat or Scallops or Lobster or all three
2 pieces broiled white fish, cooked (any type)
salt & pepper to taste

Throw everything in a crock pot on high for about an hour, until veg. are done. Stir all ingredients and Add Milk if Chowder is too thick.


Laurel's note: I looked for Old Bay Seasoning and couldn't find it (in NYC of all places) but I did find a recipe to make your own. I'm including it with Zeeber's recipe so that we can all try this chowder!

Make your own Old Bay Seasoning mix to store in your pantry.

Total Time: 15 minutes

Ingredients:

  • 1 tablespoon ground dried bay leaves
  • 2 teaspoons celery salt
  • 1-1/2 teaspoons dry mustard
  • 1-1/2 teaspoons ground black pepper
  • 1 teaspoon sweet or smoked paprika
  • 1 teaspoon ground celery seeds
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes
  • 1/ teaspoon ground cloves
  • 1/8 teaspoon ground mace
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice

Preparation:

Combine all ingredients and mix thoroughly. Store in an airtight container and store in a cool place. Use with seafood or chicken. Makes about 1/4 cup.

If you want to make this with fresh spices you grind yourself, use this recipe for Whole Spice Old Bay Seasoning Mix. And, as always, adjust the spices to your own taste.

You can sometimes find ground bay in your supermarket, but you may have to grind it yourself. Be sure to use dried bay leaves, not fresh, and grind to a powder.
